Baked shrimp with a crabmeat stuffing. This month for FishFridayFoodies we are each posting a holiday appetizer utilizing seafood. And they make an excellent appetizer, but if you want them for dinner, I might suggest serving these with wild rice, a salad and a glass of Riesling. Not that I had that. I thought about making wild rice but changed my mind as dinner approached. I had looked at some Rieslings recently when I was out- but I skipped it since my wine cellar is still fairly stocked. But as we pass through the Turkey Day season and head onward to holiday parties, I wish you all the joy these kind of celebrations can bring.

However, I adore crab, and shrimp adorned with crab meat is a whole new ballgame. Some preparations of crab stuffing consist mostly of breading and are short on crab. This recipe contains only enough breading to help hold the stuffing together. Crab is the main attraction in this dish which is just the way I like it! Placing the cut side of a butterflied shrimp down provides the perfect base for the stuffing. The tail curls up over the stuffing and makes a beautiful presentation.

Lay on greased cookie sheet to form a circle with the tail pointing up. Fan the tail out for beauty and handle Mix first 7 ingredients and gently fold into crabmeat.

This dish is part of our family Christmas Eve celebration every year. I love baked stuffed shrimp, but so many restaurants here prepare their shrimp piled high with Ritz crackers drenched in butter.
